Emerging Concepts/Trading area expansions

Austin, TX-based DOUBLEDAVE’S PIZZAWORKS
(founded 1984), has increased 7 units, from 41 to 48
(17% growth). Locations are quick service
pizzerias, seating 40 (1250 sq ft), with a per
person check average of $4-$10. Restaurants are
open for lunch and dinner, with online ordering and
delivery services. All locations serve beer and
offer catering. More than 90% of locations are
franchised.

Sandy, UT-based RUMBI ISLAND GRILL(founded
2000), has opened 5 units, from 13 to 18 (38%
growth). Locations are fast casual, serving
Hawaiian cuisine, and with a per person check
average of $6-$12. Units seat about 90 (2500 sq
ft) and are open for lunch and dinner. Trading
areas are AZ, CO, and UT.

Dallas, TX-based KOKOPELLI MEXICAN GRILL
(founded 1997), has increased 3 units, from 3 to 6
(100% growth). These fast casual Mexican
restaurants are open for lunch and dinner, with a
per person check average of $3-$8. Beer and wine
is served. Locations seat about 100 (3000 sq ft).
More than 60% of the restaurants are franchised.
Trading areas are AZ, MI, NV, OH, and OR, with a
location opening soon in NC.

MINA GROUP based in San Francisco, CA
(founded 2002) has added 2 new concepts, and as a
result has grown two locations, from 6 to 8 units
(33% growth) and moved into a new state (NJ).
Current concepts are Arcadia (1), Michael Mina (2),
Nobhill (1), Seablue (1), Stonehill Tavern (1), plus
the new concepts: Seablue Borgata (1) and Stripsteak
(1). Locations are upscale steak and seafood, with
full bar and seating for about 250 (7000 sq ft).
Per person check average is from $30-$50+ per
person. Current trading states are CA, NV and NJ.
Several locations are inside casino hotels.

VOCELLI PIZZA of Pittsburgh, PA (founded
1988) increased by 5 units, from 125 to 130 (4%
growth) during the period. They also opened 12 new
units during the prior 2 periods (15% one-year
growth). The units are take-out/delivery and offer
catering. They are open for lunch and dinner with a
per person check average of $3-$8. Locations are
currently in FL, MD, NC, OH, PA, SC, VA and WV and
are 80% franchised.

Portland, ME-based O’NATURAL’S (founded
2001), has increased by 1 unit, from 4 to 5. The company has
now entered into the state of KS. Other locations
are in MA and ME. These fast casual, organic food
restaurants are open for lunch and dinner, with a
per person check average of $3-$8. Units average
about 60 seats (1500 sq ft) and offer catering
service. One location is franchised. Beer/wine and
private party facilities are available at some
locations.

Continual growth

Dallas, TX-based BOSTON’S THE GOURMET PIZZA
(founded 1964), has increased by 34 units, from 274
to 308 (12% growth) and has expanded into the states
of NJ, NV, FL, and the province of PE, Canada.
Restaurants are family casual, pizza sports pubs,
with a full bar and seating for about 250 (7000 sq
ft). Per person check average is $10-$30, with
lunch and dinner meals served. Delivery is
available. Between 80% & 90% of locations are
franchised. Restaurants are located in the states
of AK, AZ, CA, CO, FL, GA, IA, IN, MI, MN, ND, NE,
NJ, NM, NV, PA, SD, TX, WA and WI, and in the
provinces of AB, BC, MB, NB, NL, NS, NT, ON, PE, PQ,
SK, and YT. The company also has 3 regional
corporate offices in Canada.


CARIBOU COFFEE of Brooklyn Center, MN
(Nasdaq: CBOU, founded 1992) has opened 16 new units
during the period, from 416 to 432 (3% growth) and
expanded into KS and MO. There has been a total
increase of 95 units during the last 3 periods (28%
one-year growth). Locations are quick service, with
seating for about 20 (1000 sq ft) and open for
breakfast, lunch and dinner. Stores are currently
located in CO, DC, GA, IA, IL, IN, KS, MD, MI, MN,
MO, NC, ND, NE, OH, PA, SD, VA and WI.

Units Decreased

K-BOB'S STEAKHOUSE based in Santa Fe, NM
(founded 1966) has decreased by 4 units from 23 to
19 (17% downsizing). Locations are family/casual
steakhouses serving beer and wine with seating for
about 200 (5000 sq ft). The per person check
average is from $10-$30. They are located in CO,
NM, OK and TX. There are plans to open a new
location in Ruidoso, NM during the summer of
’07.

Correction on last weeks newsletter regarding Kona Grill

Kona Grill.On last weeks report we mis-stated
their size, capacity and style. Their 14 current locations
average 300 seats and are 7,000 sq. feet in size. In
addition the cuisine is American grill and they
serve sushi at two locations.

Coming in January

You can expect to see some changes In January.

1)A published list of the top 10 growth
chains. Taking into account a specific set of
parameters, you can expect to see a list each
calendar quarter displaying the top growers from the
preceding three month period.

2)A larger, more enhanced newsletter. We will
continue to publish a free newsletter and we will
also be publishing a paid version that will be
larger and display more company specifics. Current
