Emerging concepts

Roswell, GA-based J. CHRISTOPHER’S RESTAURANTS
(founded 1996) have opened 2 locations, from 12
to 14 (17% growth). The restaurants are
family/casual style, open for breakfast and lunch, with
check averages of $4-$10 per person. Locations seat
about 125 (3500 sq ft), and offer banquet
facilities. No alcohol is served. Locations are in
the states of GA and FL.

Orlando, FL-based CONWAY’S BBQ has opened 1
new location (from 4 to 5), which marks the
company’s expansion into the state of PA. A 2nd
PA location is planned in Allentown in a few months.
Four of the restaurants are quick service, while
two other locations are family/casual, with full bar
service. Event catering and banquet facilities are
available. Between 10 and 20% of locations are
franchised. Locations are in FL and PA.

BOBBY VAN'S STEAKHOUSE of New York, NY
(founded 1969) has opened a new location in NYC
for a total of 3 new openings during the last three
periods (43% one-year growth). The steak and
seafood restaurants are upscale featuring a full
bar, seating for approximately 150 and per person
check average of more than $50. There are now 7
locations in NY and DC. All locations are company
owned.

PAPAYA KING (founded 1932) headquartered in
New York, NY has
grown 167% during the period. The company has
opened 5 new units and expanded into CT. Stores are
quick serve with seating and standing room for about
30-40, featuring papaya smoothies and hot
dogs. Per person check average is $3-$6
Currently there are 8 locations in CT and NY. The
stores are traditionally freestanding and current
expansions include airport operations. 2 more
locations are planned to open by year end. Locations
are 75% franchised.

FATZ CAFÉ (founded 1988) of Taylors, SC has
opened 3 new
locations during the period for a total of 9 new
locations during the past three periods (36%
one-year growth). The units are family/casual with
seating for about 250 persons, full bar and a check
average of $10-$30. There are now 34 company
owned locations in GA, NC, SC and TN.

Continual growth/Trading area expansion

Minneapolis, MN-based BUFFALO WILD WINGS,
founded in 1982, (NASDAQ: BWLD), has increased 15
units during the last four month period, from 384 to
389 locations. They have also just entered into the
state of OR. The restaurants are family/casual
style, with check averages of $6-$12 per person.
All locations have a full bar, with seating for
about 200 (5000 sq ft). Catering is also available.
The restaurant chain sells their BBQ sauce flavors
for purchase online as well as in all restaurant
locations. Nearly 70% of locations are franchised.
Locations are located in the states of AL, AR, AZ,
CA, CO, CT, DE, FL, GA, IA, IL, IN, KS, KY, LA, MD,
MI, MN, MO, MS, MT, NC, ND, NE, NV, NY, OH, OK, OR,
PA, SC, SD, TN, TX, VA, WI and WV.

Units Decreased

Jacksonville, FL-based ROLY POLY ROLLED
SANDWICHES (founded 1996), has closed 28
locations during the last four month period, from
189 to 161 locations (15% downsizing). The company
has also closed all units in the state of IA.
During the prior reporting period (Jan ’06 to May
’06), we reported a 22-store closure. These quick
service sandwich restaurants have seating for about
20 (1250 sq ft), with check averages of $3-$8 per
person. Catering and delivery services are
available. More than 90% of locations are
franchised. Locations are now in the states of AL,
CA, CT, DE, FL, GA, IL, IN, KS, KY, LA, MD, MI, MN,
MO, MS, NC, NJ, OH, OK, OR, PA, SC, TN, TX, VA, and
WI.

JOFFREY'S COFFEE & TEA CO based in Tampa, FL
(founded 1984) has closed 2 locations (25%
downsizing). Currently there are 6 locations in FL.
Locations are mostly take-out, with about
20 seats. They are open for breakfast, lunch and
dinner. Per person check average is $2-$6.
Ownership of locations are through license
agreement, they are not franchised.
