Emerging concepts
Austin, TX-based MANGIA STUFFED CHICAGO
PIZZA (founded in 1988), has opened 2 locations
during the last four months, from 4 to 6 locations
(50% growth). The family/casual pizza restaurants
are open for lunch and dinner, with a $4-$10 per
person check average. The restaurants offer delivery
and catering services, as well as banquet facilities.
Average seating per is unit is for 150 (3500 sq ft).
All locations are in TX.
Denver, CO-based SPICY PICKLE SUB SHOP
(founded in 1999), has grown by 42% during the last
four months, from 12 to now 17 locations. This fast
casual sandwich chain is open for lunch and dinner,
with seating for about 30 (1000 sq ft). Catering and
delivery service is available. Locations are in the
states of CA, CO, OR, SD, and TX, with locations
planned in NV and VA over the coming year. More
than 90% of locations are franchised.
Sandy, UT-based COSTA VIDA FRESH MEXICAN
GRILL (founded in 2003), has grown by 23%,
from 13 to 16 locations open. They have also just
added stores in the states of TN and ID. This
concept was previously reported on in our 2/28/06
newsletter, as showing a 57% growth increase.
These fast casual Mexican restaurants are open for
lunch and dinner, with a $3-$8 per person check
average. Units have seating for about 50 (1500 sq
ft). More than 90% of locations are franchised.
Restaurant locations are in the states of AZ, CO, ID,
ME, TN, and UT.

Continued expansion
SALADWORKS of Conshohocken, PA (founded
in 1986) has grown 3 new units from 74-77 (4%
growth). The locations are quick service with a per
person check average of $4-$10 and seating for
about 70. They are currently located in DC, DE, FL,
IL, MD, NJ and PA. All locations are
franchised.
METROTAINMENT CAFES (founded in 1991)
based in Atlanta, GA has opened a new concept
called Hudson Grill. They currently have 10 units in
GA: Cheyenne Grill (1), Cowtippers (1), Einstein's (1),
Garrison's Broiler & Tap (3), Hudson Grill (1), Joe's (2)
and Metrotainment Bakery (1). The stores are
family/casual style with a full bar, seating for about
250 and per person check average of $10 to
$30. All units are company owned.

Units Decreased
JOE'S SHANGHAI of New York, NY (founded
in 1995) has closed its 2-unit Joe’s Ginger concept.
The company now has 3 Joe’s Shanghai units in the
NYC area. The stores are upscale Chinese food
locations with full bars and seating for about 100. All
locations are company owned with per person check
averages of $10-$30.
ROCKFISH SEAFOOD GRILL of Dallas, TX
(founded in 1994) has closed 1 unit during the period and 3 units
during the previous 2 periods (20% one-year
downsizing). Stores are family/casual style with a full
bar, seating for 250 people and per person check
averages of $6-$15. Currently there are 16
locations in AZ, NC, NM and TX. All locations are company
owned.
