Growing and emerging concepts

CEREALITY of Chicago, IL (founded 2003) has increased by 2 units, from 4 to 6 (50% growth). This is a quick serve franchise operation specializing in cereals. Units seat around 30 and most are located on college campuses and in malls. The check average is around $2-$6 per person. Locations are currently in AZ, IL, NJ and PA.

Jean Luc Kleefield of JLX BISTRO who is the chef/owner of an upscale restaurant group has opened a new concept called Prime 103 (50% company growth) in East Hampton, NY. Restaurants have full bars and a check average of more than $30 per person. Current concepts are Jean-luc (1), Jlx Bistro (1), Madame Tong's (1) and Prime 103 (1). Prime 103 is Steak and Sushi cuisine while all other concepts are French cuisine. All are located in NY.

Applebee's franchisee, APPLE AMERICAN GROUP LLC based in Independence, OH (founded 1998) has increased by 2 units, from 133 to 135 (2% growth). Locations are currently in DE, IN, NJ, OH, PA, WA and WV.

Sterling Heights, MI-based JET'S PIZZA (founded 1978) has opened 7 units, from 130 to 137 (5% growth). This company was last featured in our 7/31/2006 newsletter (7% growth and entered OH). The restaurants are take-out/delivery pizza shops, open for lunch and dinner. Trading areas are FL, MI, NC, OH, and TN. More than 80% of locations are franchised.

Several people have emailed me in the past few months asking how to calculate their food cost percentage. In addition, many people have asked me for an industry benchmark for food cost percentage. While the food cost formula is straight forward, it may be impossible to arrive at a true industry benchmark percentage. Continued......



Don't let a paper roll seller scam your operation.

Jeff Aufdencamp's been through the paper roll scam numerous times. Now and then a caller rings up one of his four Mama Mimi's Take 'N Bake Pizza stores and asks to speak with the person who buys paper rolls for the credit card machine, the adding machine or the POS system. It's a courtesy call, the person says. Continued....
